When vegan baking, you need a binder. Often a recipe will simply call for vinegar, other times an egg replacer will be necessary. Knowing what to use and having the option to choose what is best suited to the recipe or what’s in your cupboard can be helpful, so I have put together a very small list of easy egg replacers here for your convenience.
Per egg:
1/4 cup applesauce & 1/2 teaspoon baking powder
or
1/2 banana, mashed & 1/2 teaspoon baking powder (be aware, the banana flavour will come through, not necessarily a bad thing though)
Commercial egg replacer:
In NZ, you can buy Orgran’s “No Egg”, a powder made of tapioca and other starches (no scary ingredients, Orgran is a natural food company specialising in grain products for special diets). For about $6-7 you get a small package equal to 66 eggs. Easy on the wallet and on the animals. Oh wait, and on food miles because it only comes from Australia! Yey! I know for a fact that Pak n’ Save and New World both stock No Egg. Woolworths (and I presume Countdown) stock Orgran products but I’m not sure if that extends to No Egg.
